Solar Roast Coffee

Solar powered coffee! During a 6 hour drive from Denver to Santa Fe, I asked Cassey if we could get some coffee since I was ready for some caffeine. We were in-between towns and Pueblo was the next one coming up so I got to googling and yelping real quick to see what was approaching.

Beautiful place and people. The coffee was amazing, if you are like me into Middle American Style coffee with some chili. You have to try the Pueblo Mocha (strong, slightly bitter dark chocolate, cinnamon and chili mixed with a prominent but not dominant smooth espresso).

I love this spot. Friendly and welcoming employees. Nice regular clients as well. I always get a large hot latte made with cows milk and two extra shots of espresso, the foam has great texture. The inside is comfortable and mellow, when it’s nice out the patio seating is perfect where you can find shady or sunny spots.

Every morning I’m at Solar Roast, is a good morning. I wake up early just to stop by before work! Rae is so very personal, welcoming, and really makes such a great space! Go Solar Roast ☺️!
